How to make the coconut macaroons of Delices and Gourmandises?
Put a metallic bowl in the fridge for about 30 minutes.
Pour the cold egg-whites in it with a pinch of salt then beat them with an electric mixer to make them up in firm snow. Check the firmness by putting the bowl upside down. If the whites do not fall down, it is ok.
Add the sugar step by step and beat until it has completely melt.
Pour slowly the grated coconut and mix carefully until you have a homogeneous mixture.
Preheat the oven to 160°C.Use a pastry bag to form the macaroons on a baking sheet covered with parchment paper.
Cook for about 10 minutes. Get them out as soon as they have a delicate blond color.Let them completely chill before serving.
