An easy custard recipe presented by Délices & Gourmandises

A liquid cream with a vanilla flavor


Custard is a mixture of egg yolks, milk and sugar. Most of the time it has a vanilla flavor. Its liquid consistency is the reason why it is a perfect accompaniment to various desserts such as chocolate cake and ice cream.  However, it has to be smooth and creamy in order to be a good custard.

Ingredients


In order to prepare a custard recipe for 4, here are the ingredients you need:
•    25 cl (1 cup) of milk
•    25 cl (1 cup) cultured cream
•    4 egg yolks
•    100 gr (1/2 cup) of sugar
•    1/2 vanilla pod

Preparation


•    Boil the milk and vanilla together in a pot, then leave to cool
•    Beat the egg yolks and sugar until you get a light color mixture
•    Add cultured cream until the new mixture is evenly combined
•    Pour the mixture into the milk and take out the vanilla pod
•    Heat the mixture inside the pot and stir it with a spatula
•    Make sure boiling point is not reached. The cream is ready when you draw a line on the spatula and it stays there well defined
•    Leave to cool and keep it refrigerated

You must not forget that custard can be preserved in the refrigerator for 24 hours.

Also, if the cream was overcooked and became too thick, you can render its smoothness by using a long neck blender for a couple minutes.

The Cinsault grape variety presented by Delices and Gourmandises

The Cinsault is a very old grape variety that comes from Provence region. It has big and juicy berries that can also be eaten when chilled. It brings suppleness in some wines selected by Delices and Gourmandises.

The Cinsault grape variety has black berries which juice is white. He rapidly went out from its old Provence for the Rhône valley and the Languedoc-Roussillon. It is also cultivated in Algeria, as it needs a lot of sun and strong enough to resist heat and dryness but still give good harvest.

This grape variety slowly ripens and matures 3 weeks after the Chasselas which is the reference. As the Cinsault is very susceptible, it has to be cultivated on poor a dry soil for having good and regular harvest. When it is plated on good and rich soil, the production is heavy but the grapes quality is lower.

It was formerly cultivated with the Grenache and their combination gave a fruity and vintage wine, as the rosé proposed by Delices and Gourmandises. The recipe of "petit beurre" biscuits with Delices and gourmandises

Delices and gourmandises offers you the original recipe of these lovely golden colored treats. These homemade "petit beurre" biscuits will for sure make both kids and adults smile at snack time.

The recipe of "petit beurre" biscuits

Ingredients for about a hundred biscuits (the most you can cook, the better, because they will quickly disappear!)
- 400gr of butter
- 400gr of sugar
- 1kg of flour
- 1 teaspoon of baking powder
- 250ml of water
- 5gr of salt
Optional: a little vanilla extract or vanilla sugar
Start by melting the butter over low heat in a pan; then add water and sugar. Stop as soon as the butter is melted and the sugar is well incorporated and make sure to stir often.
In a bowl, mix flour, salt and baking powder then add the mixture made of butter, water and warmed sugar.
Stir gently - it is important not to overwork the dough - and stop as soon as the mixture is smooth.
Then let the dough rest in the fridge, covered with plastic film. It must be left at least three hours, but would be even better if you wait overnight.
Preheat your oven to 180°C.
Lower the well rested dough. It must have a thickness of about 3 mm. Then cut the cookies with a cutter in the shape you want.
Arrange the cookies on a tray lined with baking paper and bake.
Cook them until they are golden brown on the edges (it usually takes 8 to 12 min).
That's all! Your delicious butters biscuits are ready to be enjoyed.

Rene: Oh, it happened quite by chance. Since my grandchildren have the internet, they are used to show me what they like or what I may be interested in when I come at their place for a visit. One day, I told them I would love to come with sweets for them the following week. While searching for reliable websites where we could choose something nice together, we found Delices and Gourmandises … and all our favorites treats. This is where it all started.

René: I've always been fond of Delices and Gourmandises liqueur chocolates and cherries with eau-de-vie totally seduced me. Délices et Gourmandises presents here its recipe so that you can make some at home and enjoy it any time. As nature offers plenty of fruits, you may vary the flavors. This recipe uses orange and raspberry as basis.

Ingredients for 6 to 8 servings

-    A few handfuls blueberries
-    A few handfuls raspberries
-    4 gelatine leaves
-    400 ml orange juice (homemade or bottle from the supermarket)
-    2 tbs caster sugar
-    Fresh mints leaves

Method

It is recommended to make these fruit jellies in individual serving glasses.
First of all, fill the moulds with three-quarters full of berries. Let them chill in the fridge.
Put one third of the orange juice into a shallow dish. Soak in the gelatin leaves for about 10 minutes or until soft.
Over medium heat, simmer one another third of the juice into a small saucepan. Add the caster sugar and the softened gelatine, squeezing it first and reserving the liquid, and then stir to dissolve.
When the dissolved gelatine mixture has cooled to room temperature, add the remaining juice and the liquid from the squeezed gelatine, and give it all a good whisk.
Then pour the mixture over the fruits in the chilled moulds, cover, and return to the fridge to set - for at least 3 hours, preferably, overnight.
Before serving, unmold the jellies: dip the bottom of each mould in hot water, when it begins to melt, invert the jelly onto a plate. Garnish the top with mint leaves.

How to bake and serve buttery wafers

Here’s the all-star, easy-to-follow recipe of buttery wafers

Ingredients for about 5 dozens:
- 1 1/2 cups butter, room temperature
- 2 cups sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt

Instructions:
- In a large bowl, combine butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- (If you want, you can add 2 tsp vanilla extract and 1/8 tsp almond extract)
- Gradually add flour combined with baking powder and salt and stir until well mixed.
- Shape soft dough into 1-inch balls.
- Refrigerate for about 60 minutes (the proportion of butter makes the dough very soft and a bit tricky to work with when it is at room temperature.)
- Once dough has chilled, it can be shaped into logs. Shape into 1 1/2 inch diameter logs, wrap in plastic wrap and freeze until very firm.
- Preheat oven to 375°F.
- Line a baking sheet with parchment paper.
- Flatten cookies to 1/4-inch thickness slices and place on prepared baking sheet, leaving 2 inches between cookies to allow for spread.
- Bake for 8-11 minutes, until cookies are golden at the edges.
- Cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
